My favorite brea...You have some great suggestions! My favorite breakfasts that I alternate are breakfast burrito with scrambled eggs, sautéed veggies(depending on what I have on hand-squash, broccoli, onions, bell peppers, green beans, kale, etc.), homemade salsa, on a tortilla shell; sautéed veggie omelet or scrambled eggs & veggies; fruit/green smoothies(assortment of frozen banana, strawberries, pineapples, papaya, kale or spinach, etc.); and peanut butter chocolate milkshake(made with a frozen banana as the "ice cream", 2+/- T. organic peanut butter, 1 T. of unsweetened natural cocoa powder, and about 1/4 to 1/2 c. of milk(of your choice-dairy, almond, soy, whatever your preference). I try to swap these out every morning, so I don't get tired of the same old thing. I also try to prep ahead by sautéing a big batch of the vegetables either Sunday or Monday morning, and I can use them throughout the week, which cuts down on prep time.
