Make It Monday - Banana Blueberry Bread (Clean Eating Recipe)



Blueberry Banana Bread
1 1/2 C whole wheat flour
1 tsp. cinnamon
1 T ground flax seed
1.5 tsp basking soda
1/4 tsp. sea salt
3 mashed large bananas
2 egg whites
1/4 C honey
1/2 C raw sugar
1/4 tsp almond extract (or 1/2 tsp vanilla extract)
1/4 C coconut oil
3/4 C frozen blueberries

Preheat oven to 350°F. In a medium bowl, combine flour, baking soda, cinnamon, flaxseed and salt.
In a large bowl,  beat bananas until smooth. Add egg whites and beat until combined. Gradually mix in sugar, honey, extract and coconut oil. Mix dry ingredients into banana mixture; Fold in blueberries.
Spray a 9 x 5-inch loaf pan with cooking spray. Pour batter into pan and bake for 50-60 minutes, or until browned on top.

  2. I make an Apple Banana Nut bread that I substitute applesauce for the oil and greek yogurt for the sugar. I eat it at lunch topped with nut butter, sliced bananas, honey and chopped nuts. Maybe I'll try blueberries instead of the apples.

  4. Blueberries are by far my favorite! I've tried a recipe last year for bread with blueberries, but never with banana's also. I will have to try this! Thank you, I have pinned for later. :)
