Cranberry Coconut Muffins makes 18 muffins
2 C whole wheat flour
2 tsp baking soda
1 tsp cinnamon
1 egg
1/2 C raw sugar
1 C vanilla yogurt
1/4 C coconut oil, melted
3/4 C orange juice
1 C fresh cranberries, minced
1/2 C unsweetened coconut
1 tsp vanilla extract
Directions
- Preheat oven to 350 degrees
- Prepare muffin cups with oil spray or liners
- Mix together cinnamon, flour and soda in a small bowl
- In a large mixing bowl, blend together egg, sugar, yogurt, coconut oil, juice and vanilla
- Slowly add dry ingredients to wet ingredient and mix
- Stir in cranberries and coconut
- Pour in to 18 muffin cups
- Bake for 15-20 minutes
- Enjoy!
