You are going to love this recipe for Three Bean Salad! It combines all your favorites, plus some new things and uses balsamic vinegar instead of apple cider vinegar. I cannot stress enough how important it is to have a good quality balsamic vinegar is. You could probably forego the honey because a REALLY good balsamic vinegar will have both a sweet and tang taste.
Three Bean Salad
1 can Kidney Beans
1 can Garbanzo Beans
1 can Green Beans
1/2 Red Onion, minced
1 med cucumber, seeded and chopped
1/4 C balsamic vinegar (a good quality one!!)
1 T honey
2 T olive oil
2 cloves garlic, minced
1 tsp dried cilantro
Directions:
- Combine all beans, onion and cucumber in a large bowl.
- Stir to combine.
- In a shaker container, combine balsamic vinegar, honey, olive oil, garlic and cilantro and Shake.
- Pour over vegetables in bowl.
- Stir to cover.
- Let sit for at least 1/2 hour before serving.
- Enjoy!
