Slow Cooker Pasta e Fagiloi
A great vegetarian recipe that can easily be made clean by using a whole wheat noodle or gluten-free by choosing gluten-free pasta. Tons of fiber in this soup and a low fat source of protein in the beans!
Slow Cooker Pasta e Fagioli
1 can white beans
4 garlic cloves, minced
1 small onion, diced
4 oz carrots, chopped
2 celery stalks, chopped
3/4 C tomatoes, chopped
5 C broth
1 T parsley
1 tsp basil
1 tsp oregano
1/2 tsp thyme
1/2 small dry pasta (macaroni size or smaller)
9 oz. fresh spinach, chopped
Directions:
Combine all ingredients in a slow cooker (except spinach and pasta) and cook for 8-9 hours on low. Add pasta 1 hour before serving. Add spinach the last 30 minutes of cooking. Enjoy!
