Slow Cooker Saturday: Vegan Chili
Sure you can just make the Fantastic World Foods Vegetarian Chili (box also states it vegan) as it states on the box, or you can pump up the vegetable content so that it serves 6 people (4 per the box) and have it cook all day in the slow cooker and be ready for you when you get home (directions on the box are for stove top or microwave.) I am always a fan of using my slow cooker, so I opted to come up with a recipe that uses some fresh veggies that will cook all day. Prep time is about the same, but now you are not rushing to get something made right before supper.
Slow Cooker Vegan Chili
1 6.4oz box of Fantastic World Foods Vegetarian Chili
3 C water
1 15-16oz can of your choice of beans
1 15-16oz can of diced tomatoes
1 onion, chopped
3 stalks celery, chopped
1 8oz can tomato sauce
1/2 C cilantro, chopped
1 T chili powder
Directions:
Combine all ingredients in a crock pot, stir to combine. Cook on low for 8 hours. Serves 6
This is perfect! We are a meat eating household but are always looking for something to share with our vegan friends! (and what mom doesn't love something you can make in a crock pot?)
