Pumpkin Fudge with Jiva Organics Mishri
Pumpkin Fudge
2/3 C evaporated milk
1 1/2 C sugar
1/2 C canned pumpkin
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 1/2 C white chocolate baking chips
2 C mini marshmallows
1 1/2 tsp pure vanilla
Jiva Organics Organic Mishri (optional,to top with)
Directions:
Line an 8x8 pan with tin foil and spray with non-stick cooking spray.
Combine milk, sugar, pumpkin, salt, cinnamon, ginger and nutmeg in a heavy saucepan. Stir until combined. Bring to a boil over medium heat and boil for 10 minutes, stirring constantly. Stir in baking chips as you continue to cook for 2-3 minutes longer. Stir constantly until chips are completely melted and blended. Remove from heat and stir in vanilla and marshmallows.Stir until smooth.
Pour in to the prepared pan. Cover and refrigerate until set. After about 30 minutes, you can sprinkle Jive Organics Organic Mishri on to, if desired.
Flip fudge on to a cutting board using the tinfoil to remove it. Peel away tin foil and then flip fudge square back over. Enjoy!
My Thoughts on Jiva Organics Organic Mishri
This organic mishri is a hard "rock" candy that is popular in India. You can certainly eat the candy just as it is right out of the bag for a sweet treat, but why not use it as a fun and sweet ornamentation to top some fudge, like this Pumpkin Fudge. The mishri has a simple sugary sweetness and no other flavors, so if you desire a simple sweet treat without other flavors this might be the perfect thing for you. These little sugar candy morsels also taste nice in tea and coffee and look very nice in a bowl to set our for guests over for tea/coffee.
