Red Velvet Pancakes





Red Velvet Pancakes

Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
1 large egg, lightly beaten
3/4 buttermilk (or use whole milk and add a 1/2 tsp of lemon juice)
1/4 cup sour cream
3 tablespoons butter, melted
red food coloring (I used about 1/2 container)
1 teaspoon vanilla extract

Directions
Combine all ingredients and whisk until smooth (or a few lumps remain). Cook over medium high heat in a frying pan or at 350 degrees on an electric griddle. Makes approximately 12 4" pancakes

Doh! I meant to post this on a different blog of mine, but this is just as well.

There is nothing necessarily "green" about this. They are just yummy and were a special valentine's breakfast, since tomorrow (actual Valentine's Day) is a Monday and won't have time to do a family breakfast like this.
