Clean Eating Brownies
3 scoops clean chocolate protein powder
4 T unsweetened baking cocoa
2 T chia seeds
1/4 C whole wheat flour
1/4 C oat flour
2/3 C sucanat
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
pinch of salt
1 can (15 oz) black beans (drained, rinsed & pureed)
1/4 C coconut oil (melted)
6 oz container of plain unsweetened greek yogurt
1/2 tsp pure almond extract
2 eggs
Directions:
- Preheat oven to 350 degrees
- Blend together protein powder, cocoa, chia seeds, flours, sucanat, soda, powder, cinnamon and salt
- Puree together melted coconut oil, black beans, yogurt, and extract
- Mix together dry ingredients with wet ingredients, alternating wet mixture and one egg at a time
- Spray 9x9 pan with olive or canola oil cooking spray
- Bake for 30 minutes
