Pinto de Gallo Recipe
1 1/2 C brown or long grain rice, dry
3 C water
1/2 tsp. sea salt
1 med onion, chopped
3 garlic cloves, minced
1 jalepeno pepper, seeds removed & minced
1 can of beans (pinto, black, or black-eyed peas), rinsed
2 T+ olive oil
1/4 C fresh cilantro, minced
salt & pepper to taste
Directions:
- Prepare rice with water and salt as directed on package or your rice cooker
- Saute onion, garlic & jalepeno together in a extra large frying pan with olive oil(if you want to add protein to the dish, saute it with these vegetables) until onion is translucent
- Add rinsed beans to the pan, stir to combine and cook until beans are heated thoroughly
- Add additional olive oil if needed and stir in cooked rice, saute for about 10 minutes
- Add fresh cilantro and mix to combine, continue to cook for a couple more minutes to soften the cilantro
- Salt & pepper to taste
- Serve and Enjoy!
