Make It Monday: Pinto de Gallo

It's about time I finally shared this favorite recipe with my Save Green Being Green readers. We first had this dish when we traveled to Costa Rica and we loved it. You could add protein (like chicken, steak or shrimp) to this dish, but it is fantastic on it's own. This also has to be one of my favorite recipes for eating clean.



Pinto de Gallo Recipe
1 1/2 C brown or long grain rice, dry
3 C water
1/2 tsp. sea salt
1 med onion, chopped
3 garlic cloves, minced
1 jalepeno pepper, seeds removed & minced
1 can of beans (pinto, black, or black-eyed peas), rinsed
2 T+ olive oil
1/4 C fresh cilantro, minced
salt & pepper to taste

Directions: 

  • Prepare rice with water and salt as directed on package or your rice cooker
  • Saute onion, garlic & jalepeno together in a extra large frying pan with olive oil(if you want to add protein to the dish, saute it with these vegetables) until onion is translucent
  • Add rinsed beans to the pan, stir to combine and cook until beans are heated thoroughly
  • Add additional olive oil if needed and stir in cooked rice, saute for about 10 minutes
  • Add fresh cilantro and mix to combine, continue to cook for a couple more minutes to soften the cilantro
  • Salt & pepper to taste
  • Serve and Enjoy!
