Hot Mushroom and Spinach Soup





Hot Mushroom and Spinach Soup
3 C broth
1 T rice wine vinegar
1 T soy sauce
1 tsp. toasted sesame oil
1/4 tsp red pepper flakes
1 garlic clove, minced
2 scallions, chopped
2 C cole slaw mix
2 C fresh spinach, chopped
4 oz. fresh mushrooms, sliced

Directions:

  • Combine broth, vinegar, soy sauce, oil and red pepper flakes in a 2 Qt. pot and bring to a boil.
  • Add remaining ingredients and cook until add vegetables are softened (about 10 minutes).
  • Enjoy!

Yummy looking soup! I think my husband and I would like it being hot, but my kids might need a tamed down version.

I'm a sissy for hot, so I think I would leave the red pepper out. Otherwise, looks so yummy!! :)

I make a soup like this but add seaweed. I make this soup when I feel a cold coming on.
