Caprese Salad with Havarti
Just another idea for a Low Carb salad.......I know traditionally Caprese Salad uses fresh mozzarella, but I REALLY love Havarti so I thought I would try this salad with that instead and it works!
And it taste even better because I used fresh basil and tomatoes from my garden!
Be sure to use a high quality balsamic vinegar. It makes a HUGE difference!

Simple Bean and Corn Salsa
Do you remember that cookbook.....A Man A Can and A Plan? Or something like that. I have never actually read it, just remember the ads from on TV. Anyways, this is totally a recipe that could fit in there, as you could just stop with the 3 cans and not add any of the fresh ingredients and have perfectly good salsa, but I like to add some fresh stuff too!
Simple Bean and Corn Salsa
1 can whole kernel corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes with jalepenos (Ro-tel)
1/2 C chopped cilantro
1/2 C chopped green onions
Directions:
Mix all ingredients together. Best if allowed to sit for a couple hours to allow all the flavors to meld together.

Make It Monday: Tomato & Zucchini Salsa
This is my mom's recipe and I often tell people about it when they are looking for either a thick recipe, another way to use up zucchini, or they just want something different to try. The recipe below is the one she gave me, but you cans always make it spicier if you choose.
Tomato & Zucchini Salsa
Yields: 13 pints
8 C shredded zucchini
4 C chopped onions
2-3 hot peppers
1 C green peppers
5 T salt
1 tsp garlic powder
1 T cumin
1 1/2 T corn starch
2 tsp dry mustard
1 1/2 C vinegar
1 T cayenne
4 dashed hot sauce
1-2 T crushed red pepper
1 tsp turmeric
1 tsp black pepper
2 (16oz) cans of tomato paste
10 C peeled tomatoes
1/2 C brown sugar (I have left this out before and it's still very good, if you do not want any sugar)
Directions:
Combine all in a large slow cooker for several hours. Put in jars and process.

Make It Monday: Fresh Black Bean Salsa Recipe
Fresh Salsa Recipe
3 large tomatoes, chopped
1 med red onion, chopped
1-2 hot peppers, diced (you choose the amount & kind based on how spicy you would like it)
2 grilled corn on the cob (corn sliced off)
1 can black beans (rinsed and drained)
fresh cilantro (I used about 1/4 of a bunch)
Directions:
Combine all ingredients and stir. You can serve immediately or allow to sit for a while so the flavors start to blend together.
**Often I like to add a small-medium chopped zucchini or yellow squash to the salsa. It adds a pleasant surprise and additional light flavor.
