Caprese Salad with Havarti


Just another idea for a Low Carb salad.......I know traditionally Caprese Salad uses fresh mozzarella, but I REALLY love Havarti so I thought I would try this salad with that instead and it works!

And it taste even better because I used fresh basil and tomatoes from my garden!

Be sure to use a high quality balsamic vinegar. It makes a HUGE difference!

Simple Bean and Corn Salsa



Do you remember that cookbook.....A Man A Can and A Plan? Or something like that. I have never actually read it, just remember the ads from on TV. Anyways, this is totally a recipe that could fit in there, as you could just stop with the 3 cans and not add any of the fresh ingredients and have perfectly good salsa, but I like to add some fresh stuff too!

Simple Bean and Corn Salsa
1 can whole kernel corn, drained
1 can black beans, rinsed and drained
1 can diced tomatoes with jalepenos (Ro-tel)
1/2 C chopped cilantro
1/2 C chopped green onions

Directions:
Mix all ingredients together. Best if allowed to sit for a couple hours to allow all the flavors to meld together.

Tex-Mex Corn and Quinoa Salad


 I just love that I can use spinach and cilantro from my garden in this salad. We had a ton of cilantro this year because it was a hardy re-seeder.

Tex-Mex Corn and Quinoa Salad
1 1/2 C Quinoa
1 11 oz. can Jalapeno Corn (it's just corn with jalapeno & green peppers in it, look in the Mexican food section of the grocery store)
1 15.5 oz. can Mild Chili Beans
1/2
C Cilantro, chopped
2 C Greens, chopped (I used spinach)
1/2 C cheddar cheese, shredded


Directions:

  • Cook quinoa according to instructions
  • Allow quinoa to cool before mixing
  • Mix together remaining ingredients
  • Enjoy!

Asian Zucchini Slaw and Review of APlusChef Spiral Slicer



Asian Zucchini Slaw
1 med-lg zucchini (shredded or use a spiralizer)
1 large carrot, shredded
2 T rice wine vinegar
1 tsp toasted sesame oil
1/2 tsp soy sauce

Directions: 

  • Shred both zucchini and carrot and toss together
  • Mix together vinegar, oil and soy sauce
  • Pour over zucchini mixture and toss.
  • Allow to set in the refrigerator for 2-3 hours before serving
  • Toss again before serving
  • Sprinkle sesame seeds on top, if desired.
  • Enjoy!

My Thoughts:

I really love using the  APlusChef Spiral Slicer Bundle. It comes with the spiral slicer, a storage bag, cleaning brush as well as a ceramic peeler. I own another one of these, but I had to have one to use at our cabin. I love that I can make fun and interesting meals using this product. I love to make zucchini noodles and serve them raw as a slaw or cook them and serve spaghetti sauce over the top. I also like to use it to make a cucumber salad. It's just a simple spiral slicer that is easy to use but people are always impressed by the looks of the food I serve them when I use this.

Make It Monday: Low Carb Broccoli & Bacon Salad


Low Carb Broccoli and Bacon Salad
6 C broccoli, chopped in to florets
8 oz. shredded cheddar cheese.
3 oz. bacon, broken in to pieces
3 packets stevia
2 T apple cider vinegar
3/4 C mayo

Directions:

  • Mix together stevia, vinegar and mayo
  • Stir together broccoli, cheese and bacon in a large bowl
  • Pour mayo mixture over the top
  • Stir to coat
  • Enjoy!!

Slow Cooker Saturday: Carne Picada Salad


Mexican cuisine night in your household can be both healthy and cost effective. Carne Picada is a the type of labeled beef you want to look for in your supermarket. All it is, is simply very thin slices of beef from cheaper cuts of beef. Now, you are probably wondering how this is a slow cooker meal. Well, you could make carne picada just as you would tacos on the stove top and that is how you start out, but the beef carne picada tends to be cut from are tougher cuts and if you cook it all day in the slow cooker you will come home to very tender slices of meat.

Slow Cooker Carne Picada
1 1/2 - 2 pounds of carne picada beef
2-3 T  Clean Eating Taco Seasoning (click link for my recipe)
3/4 - 1 C water

Directions: Brown beef lightly on the stove top. Transfer beef to a 3 qt slow cooker. Sprinkle taco seasoning on top and water. Stir. Cook on low for 6- 8 hours.


Carne Picada Salad
Make a bed of lettuce. Layer on top Slow Cooker Carne Picada, avocados, corn, black olives, salsa and any other favorite toppings, Enjoy!

Make It Monday: Clean Eating Cole Slaw Recipe


Are you thinking of a side did to have for Easter? Or maybe thinking ahead to picnics and potlucks! Traditional cole slaw is loaded with mayo and fat, try out this clean eating version and you won't miss the old kind.

Clean Eating Cole Slaw
14 oz. shredded cole slaw mix
6 oz container of plain Greek yogurt
2 tsp brown mustard
1 T raw honey
salt and pepper to taste

Directions: Combine yogurt, mustard, honey , salt & pepper in a shaker or mix with a blender. Pour over cole slaw mix and stir to cover. Allow to sit for 30 minutes before serving. Enjoy!

GIVEAWAY and Review: Fresh Express Salads


I had this awesome opportunity to sample and review a variety of Fresh Express Salads with my family and friends. My daughter couldn't get enough of this salad. We added a few of our own toppings, but it was the addition of bacon to the rest of the Caesar salad she loved. That girl loves bacon, but who can blame her. It is quite a tasty salad. She was bummed when she couldn't have seconds and even more bummed I didn't have another bag for dinner the next day. I had to remedy that by purchasing 2 more bag of this on my next shopping trip and we are having this tonight.

Make It Monday: Three Bean Salad Recipe




You are going to love this recipe for Three Bean Salad! It combines all your favorites, plus some new things and uses balsamic vinegar instead of apple cider vinegar. I cannot stress enough how important it is to have a good quality balsamic vinegar is. You could probably forego the honey because a REALLY good balsamic vinegar will have both a sweet and tang taste.


Three Bean Salad
1 can Kidney Beans
1 can Garbanzo Beans
1 can Green Beans
1/2 Red Onion, minced
1 med cucumber, seeded and chopped
1/4 C balsamic vinegar (a good quality one!!)
1 T honey
2 T olive oil
2 cloves garlic, minced
1 tsp dried cilantro

Directions:

  • Combine all beans, onion and cucumber in a large bowl.
  • Stir to combine.
  • In a shaker container, combine balsamic vinegar, honey, olive oil, garlic and cilantro and Shake.
  • Pour over vegetables in bowl.
  • Stir to cover.
  • Let sit for at least 1/2 hour before serving.
  • Enjoy!

Make It Monday: Cucumber Salad

Summer is upon us and that means we will start to have an abundance of fresh produce from our garden and available at area farmer's markets. The cucumber salad I grew up eating contains mayonaise, but this is a clean eating version that uses vinegar and a little honey to help flavor it and enhance the natural flavors of the vegetables.




Cucumber Salad serves 2
1 large cucumber (or 2 medium), peeled and chopped or sliced
1 large Roma tomato, chopped
1-2 T chopped onion (red onion will add a nice color, or 2 green scallions)
1 T fresh cilantro, chopped
2 T apple cider vinegar
3 tsp honey
1/2 tsp cumin
salt and pepper to taste

Directions: 

  • Chopped cucumber, tomato, onion and cilantro and toss together in a bowl
  • Mix together (a shaker works best)vinegar, honey, cumin, salt and pepper
  • Pour wet mixture over vegetables
  • Serve and Enjoy!
