Make It Monday: 10 Paleo Freezer Slow Cooker Meals & Review of Savvy Livings Professional Knife



This time around when I did freezer meals (read my post Making 12 Clean Eating Slow Cooker Meals to see my last time and for more recipes) I decided that I really wanted to incorporate a lot of my favorites that I have shared on here because I do have a lot of really great slow cooker recipes on Save Green Being Green that are paleo and clean eating and can easily be frozen. This time I also wanted a variety of meats including chicken, beef, turkey, pork and shrimp (the other post was pretty much just chicken and beef.) Not all the recipes are mine and I have given credit to where the original recipe is from, but you don't have to go to it because I have included all of the ingredients needed to toss in your 1 gallon bags. The shopping list is below as well to make things easier for you. And then at the bottom of the post I have a review to share with you of the Savvy Living 6" Professional Ceramic Chef's Knife, which is great for all the chopping you are going to be doing to make these meals.

Shopping List

Meat
7 lbs. boneless, skinless chicken breasts
2 lb shrimp
1 lb ground turkey or beef
2 lbs ground beef
2 pounds, beef roast
2 pounds pork shoulder
2.5 pounds pork (chops, tenderloin or roast)

Fresh Vegetables
3 head garlic (22 cloves)
2 pkgs - 8 oz fresh mushrooms
8 med yellow onion
2 med red onion
fresh cilantro
1 lime
1 jalepeno
2 stalks celery
1 green pepper
2 red pepper
3 carrots
1 bunch green onions
3 T ginger root
1 bunch kale or swiss chard

Canned Items
1.5 C chicken stock/broth
1.5 C beef stock/broth
5 C salsa
1 - 15-oz can black beans
1 - 15-oz can corn
2 C tomato juice
1 - 14 oz can diced tomatoes
1 - 28 oz can of whole tomatoes
1 - 28 oz can of crushed tomatoes
2 - 6 oz cans of tomato paste
1 can pineapple chunks
1 10oz can mushrooms

Seasonings and Oils
basil
thyme
cumin
red pepper flakes
garlic powder
cayenne powder
paprika
lemon juice
parsley flakes
oregano
cloves
chili powder
red wine vinegar
apple cider vinegar
Worcestershire sauce
tamari (soy) sauce
taco sauce

1. Chicken & Mushroom Stroganoff 
  • 2 ½ pounds, chicken (in strips)
  • 4 garlic cloves (minced)
  • 8 oz mushrooms, sliced or quartered
  • 1 med onion, thinly sliced
  • 1 T basil
  • 1 tsp thyme
  • 1/8 tsp pepper
  • sea salt to taste
  • 1 1/2 C chicken broth
Add Later
    6 oz plain Greek yogurt
2 T corn starch
1/4 cold water   

2.  Cilantro Lime Chicken
  • 2 pounds boneless skinless chicken
  • 2 C salsa
  • 1 small red onion, chopped
  • 1/3 C fresh cilantro, minced
  • juice of 1 lime

3.  Shrimp Creole
  • 1 cup Finely Chopped Onion
  • ½ cups Chopped Celery
  • 1 whole Medium Green Pepper, Chopped
  • 14 ounces, weight Petite Diced Tomatoes, With Juice
  • 2 Tablespoons Ketchup
  • 10 ounces, weight Canned Sliced Mushrooms, Drained
  • 1 teaspoon Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Cayenne Pepper
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Parsley Flakes
  • 1 pound Cooked Fresh & Shelled Shrimp



4. Southwestern Chicken Stew
  • 2.5 pounds boneless, skinless chicken breast, 1" cubed
  • 1/2 C cilantro, minced
  • 1 med red onion, chopped
  • 1 jalepeno pepper, chopped
  • 15 oz can pinto or black beans, drained and rinsed
  • 15 oz can corn, drained
  • 1 tsp. cumin
  • 1/4 tsp red pepper flakes
  • 2 C tomato juice
  • 24 oz salsa

5. Shrimp Arrabiata
  • 1 can (28 oz) whole tomatoes in thick puree
  • 1 lg onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper
  • 1 lb medium shrimp, peeled and deveined

6. Meat Spaghetti Sauce (over zucchini noodles)
  • 1 lb. ground turkey
  • 1 can (28 oz) of crushed tomatoes
  • 1 med. onion chopped
  • 8 oz sliced mushrooms
  • 4 cloves garlic, minced
  • 2 T red wine vinegar
  • 1/4 tsp red pepper flakes
  • 1 tsp oregano
  • 1 tsp basil

7. Sloppy Joes - Serve on Coconut Flour Drop Biscuits
  • 2 pounds ground beef
  • 1 med onion
  • 3 cloves garlic, minced
  • 2 6oz cans of tomato paste
  • 2 T water
  • 2 T apple cider vinegar
  • 2 T worcestershire sauce
  • 2 tsp. mustard
  • 1/4 tsp. cloves
  • 4-6 packets of stevia
  • salt and pepper, to taste

8. Ginger Beef
  • 2 pounds beef roast (either leave bone-in or cut into 1-inch cubes)
  • 3 carrots, cut into 1-inch-thick slices
  • 1 c. green onions
  • 1 c. chopped red bell pepper
  • 3 garlic cloves, minced
  • 2-4 Tbs. grated fresh ginger
  • 1 – 1 1/2 c. beef stock
  • 1/2-1 tsp. red pepper flakes
  • 2 Tbs. tapioca or arrowroot powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • chopped kale or swiss chard, to preference
Add later
  • 1 c. sugar snap peas

9. Pineapple Pulled Pork
  • 1 and 1/2 pounds pork shoulder
  • 1/2 cup fresh-made organic pineapple juice
  • 1/2 cup filter water
  • 1 small organic onion, roughly diced
  • 3 cloves garlic, sliced
  • 1 tablespoon organic mustard
  • 1/2 cup ketchup
  • 1/2 teaspoon ground cumin
  • 2 teaspoons paprika
  • 2 teaspoons apple cider vinegar
  • 1 cup organic pineapple, diced into bite-sized chunks

10. Pork Carnitas
  • 2 1/2 lbs. boneless pork chops, pork roast or tenderloin
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 Tbs. chili powder
  • 1 tsp. cumin
  • 1/2 cup taco sauce






My Thoughts:

With all the chopping you are doing to make these paleo freezer slow cooker meals, you will want to have a high quality knife like the Savvy Living 6" Professional Ceramic Chef's Knife. I think this size is great for chopping up vegetables as well as cutting meats in to chunks. The package says to store it in the sheeth it comes in or in a knife block and I happened to have the perfect space open in my knife block, so I keep it in there. I also like the curved handle. It fits nicely in the there as I am chopping and feels very natural.

Southwestern Chicken stew is not Paleo if it includes both beans and corn, right? Still looks delicious though.

These look delicious and I plan to try some this weekend. Just a note, though. A few of these are not Paleo. For people who are just starting out with Paleo, it is important to make sure that when you label something on your site as Paleo, that it actually is, because it is misleading and confusing to newcomers. Paleo does not allow grains (this includes corn and all corn byproducts), sugar (got to watch for things like ketchup with hidden sugar), beans, dairy (one recipe had yogurt in it) except for grass fed ghee, or soy (one recipe had soy sauce/tamari). It can be confusing starting out, so reading labels is super important. Thanks for putting these recipes together. Can't wait to try some of them!
