Corned Beef Face Dip




Halloween Cheese Dip
2 pkg Budding Corned Beef
2 8 oz. pkgs cream cheese, room temperature
2-3 green onions, sliced
2-3 tsp. worchestershire sauce
2 tsp. salt
Green olives and tortilla strips salad topping

Directions:

  • Chop one package of corned beef 
  • Mix together chopped corn beef , cream cheese, onions, salt and worchestershire sauce
  • Shape in to a ball and chill in the fridge for 3 hours
  • Remove chilled cheese ball from the fridge and place on a plate
  • Place strips of plastic wrap under the side of the ball before shaping, you will be able to easily pull the strips off before serving so you have a clean plate
  • Shape cheese ball in to a head
  • Slice 2nd package of corned beef in to strips
  • Press 2 green olives in to place as eyes
  • Cover head with corned beef strips, leaving a thin strip open to insert tortilla strips
  • Insert tortilla strips as teeth
  • Serve with assorted crackers or pumpkin tortilla chips.

Easy Shrimp and Crab Ceviche


My kid love anything shrimp and crab. I did use imitation crab in this recipe, but you could use real crab if you wanted. This is a perfect summer recipe. It is filling with lots of good protein and vegetables and doesn't heat up the house.

Shrimp and Crab Ceviche Recipe
12 oz. frozen (cooked) shrimp, thawed and tails removed
1 lb. imitation crab sticks, cubed
1 can of Ro-tel, drained
2 avocados, diced
1/2 bunch cilantro, chopped
1/2 red onion, chopped
2-4 (depending upon size) limes, juiced
salt and pepper, to taste

Directions:
Chop, dice, cube, juice all ingredients as indicated above. Toss all ingredients in a bowl together, pouring lime juice over the top and mix evenly. Allow flavors to blend together for 30-60 minutes before serving.

Make It Monday: Beefy Bean Dip


This is super simple! And super tasty! I made this and brought this for a Mexican themed family picnic and received several compliments on it.

Beefy Beef Dip

1 pound of ground beef
1 package of taco seasoning
1/2 C water
1 cans refried beans
1 C salsa
2 C Queso Blanco

Directions:

  • Preheat oven to 375 degrees
  • Brown ground beef
  • Make taco meat as per instructions (mine used 1/2 water)
  • Mix together taco meat, refried beans and salsa in a bowl until well mixed
  • Pour mixture into a casserole dish
  • Bake at 375 degrees for 45 minutes
  • After 35 minutes, top with cheese and bake 10 additional mintues
  • Serve with tortilla chips.
  • Enjoy!
