Make It Monday: Three Bean Salad Recipe




You are going to love this recipe for Three Bean Salad! It combines all your favorites, plus some new things and uses balsamic vinegar instead of apple cider vinegar. I cannot stress enough how important it is to have a good quality balsamic vinegar is. You could probably forego the honey because a REALLY good balsamic vinegar will have both a sweet and tang taste.


Three Bean Salad
1 can Kidney Beans
1 can Garbanzo Beans
1 can Green Beans
1/2 Red Onion, minced
1 med cucumber, seeded and chopped
1/4 C balsamic vinegar (a good quality one!!)
1 T honey
2 T olive oil
2 cloves garlic, minced
1 tsp dried cilantro

Directions:

  • Combine all beans, onion and cucumber in a large bowl.
  • Stir to combine.
  • In a shaker container, combine balsamic vinegar, honey, olive oil, garlic and cilantro and Shake.
  • Pour over vegetables in bowl.
  • Stir to cover.
  • Let sit for at least 1/2 hour before serving.
  • Enjoy!

I loved that canned three bean salad as a kid. Now I have a craving! I have everything but the garbanzo beans....hmmm.....
