Make It Monday: Clean Eating Crockpot Beef Stroganoff



Clean Eating Crockpot Beef Stroganoff


1.5 lbs beef stew meat
1/2 C whole wheat flour
1 tsp salt
1 tsp paprika
olive oil
1 small onion, sliced
8 oz sliced mushrooms
1/4 tsp. rosemary
1 garlic clove, minced
1 C beef broth
1 C yogurt cheese (or sour cream)
1 16oz. pkg of whole wheat egg noodles  or brown rice

Mix flour, salt and paprika in a gallon size ziploc bag. Place in chunks of  beef and seal. Toss bag around to coat evenly. Fry beef in a frying pan in olive oil until all sides are lightly browned. Layer onion, mushrooms, rosemary, garlic clove, and fried beef in the crockpot. Pour broth over the top of content of the crockpot. Cook on high for 4-5 hours or low for 8 hours. The last 10 minutes, stir in yogurt cheese. Serve over the top of prepared noodles or rice.

can i use Greek Yogurt instead of yogurt cheese?

I think greek yogurt would be fine. Just make sure you have real greek yogurt by reading the label to make sure they aren't adding corn starch and other things to it.

Can I fry the beef the night before and refrigerate it?

I don't typically use almond or coconut flour, so I can't comment how well it would work, but I think it would be ok.

I used greek yogurt, 8 hours was a bit too long. I stopped it at 7 hours and had to add a more beef broth as it was too dry. It was delicious and a hit with the kids! Will definately make again!

I LOVE this recipe so thank you first of all! I tried greek yogurt instead of sour cream and it curdled ruining my entire pot! I advise against it lol

If you add the yogurt at the end (30 min ish prior to serving on a low setting) it will work and not curdle :)

The flour is just to thicken.. so I wouldn't use coconut or almond.. use arrowroot powder

Does the meat have to be fried first? I see other stroganoff recipes that place the meat uncooked into the crock, and wondered if the same could be done with this recipe?
