1/2 C coconut oil
1 C raw cane sugar
2 C whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1/2 sour milk
1 C mashed ripe bananas
2 eggs
1/2 tsp almond extract
1/2 C black walnuts (optional)
Directions:
Preheat oven to 375 degrees.
Grease a 9x13 cake pan.
Cream coconut oil with sugar.
Stir in dry ingredients.
Add 1/4 C sour milk and bananas and mix on low until all dry ingredients are dampened.
Add eggs, walnuts (optional), 1/4 C sour milk and extract.
Beat at medium speed for 2 minutes.
Bake for 25 minutes.
Dust with powdered sugar or frost with cream cheese frosting.
