Slow Cooker Sausage and Rice Stew
1 lb pork sausage (I like the pork and bacon variety)
8 oz. sliced baby bella mushrooms
3 scallions, chopped
2 celery stalks, chopped
6 oz. dry rice blend (I used 2 oz each of black, brown and long grain rice)
6 C chicken broth
1/2 C fat free sour cream
- Brown sausage on the stovetop.
- In a slow cooker, combine sausage, mushrooms, rice, scallions, celery and chicken broth.
- Cook on low for 6 hours.
- Stir in cream before serving.
