Oven Baked Portobello Mushroom and Egg with Bacon



This is a super simple breakfast or meal if you are trying to eat clean, Paleo or low carb.

Preheat you oven to 400 degrees.
Spray a baking dish with nonstick spray.
Remove stem from the mushroom and place gill side up in the dish.
Crack an egg on top.
Sprinkle with bacon crumbles, salt and pepper.
Bake for 20-25 minutes to desired egg hardness.
Enjoy!

How to Make a Perfect Hard Boiled Egg



I have tried various ways to make a perfect hard boiled egg over the years and what it really comes down to is being ready to set the timer when the water starts boiling.

How to Make a Perfect Hard Boiled Egg

Place your eggs in a small post, covering them with water completely.
Bring the water to boil. 
AS SOON AS IT STARTS BOILING, set your timer for 9 minutes.
As soon as the timer goes off, remove from heat and pour out boiling water.
Cover eggs with cold water.
After about 30 seconds, pour out that water and cover eggs again with cold water.
Allow eggs to cool in this 2nd batch of cold water.
Peel and Enjoy!

Quick and Easy Ham and Egg Cups




Breakfast today looks fancy but is super easy. 

Ham and Egg Cups
 Preheat oven to 375. 
Spray Muffin Tin
Just line muffin tin with thin ham slice and crack in whole egg. 
Season as desired. 
Bake for 20 min.

That's it! Seriously! Can it get any easier? If you want to try something with a little more ingredients, try out my Low Carb Ham and Egg Cup Recipe. Of course, this is obviously a low carb recipe, but you can change it up if you want scrambled or a whole egg.

7 Days of Eggs

Tired of making scrambled eggs or fired eggs and want to think outside the box for some creative and healthy ideas, then check out how I ate eggs on 7 days last week.



I had decided to participate in an Instagram (Follow me on Instagram) promotion for Eggsland's Best. I didn't get paid or anything, I might win a prize but I don't even know what they might be.I didn't do it for the prize, although winning one would be nice. I liked the challenge of coming up with different ways to eat my eggs every day and present them on a plate so that they looked nice on Instagram. I do love eggs and typically do eat them 2-3 times a week.

Fun Valentine Food!!!


Who said you had to spend a lot of money on Valentine's Day or that it had to filled with chocolate. You can make your loved ones a special Valentine's breakfast that is healthy too.

To make the heart shaped eggs I made boiled eggs and peeled them while they still hot/warm and put them in their homemade "mold". The mold consists of a pieces of cardboard from a cracker box that I cut to the size that would be to the top of the eggs and then folded in it halg so it had a pointed crease at the bottom. Then I used a chopstick that that I rubber banded in place to help create the indent at the top of the heart.

To make the heart toast, I simply used a heart shaped cookie cutter to cut out hearts from the bread before toasting it and topped it with my Homemade Freezer Strawberry Jam. I thought a couple of clementine pieces on a toothpick made a nice health arrow through the heart.

Low Carb Egg & Ham Cups



This is a quite simple and easy and tasty, you will wonder why you haven't added it to your breakfast recipes before this.

Low Carb Egg and Ham Cups
18 pieces of thinly sliced ham
6 eggs
1 C milk
1 1/2 C shredded cheese (I like mozzarella or cheddar)
salt & pepper to taste
cilantro (optional)

Directions: 

  • Preheat oven to 350 degree
  • Spray muffin tins with non-stick spray
  • Line 18 muffin cups each with a piece of ham. 
  • Mix together eggs, milk, cheese and seasonings.
  •  Divide egg mixture among the 18 muffin cups.
  • Bake for 20-25 minutes
  • Allow to cook for 5-10 minutes before serving
  • Enjoy!

Healthy Breakfast Idea: Mashed Avocado on Artisan Bread with Poached Eggs


Healthy breakfasts can often be quite simple. As simple as some Homemade Artisan Bread topped with mashed avocado (just mash with a fork in a bowl) and topped with poached eggs served with a side of tomato slices. Delicious, pretty and healthy!

Wordless Wedneday: Egg & Vinegar Science Experiment



This would be totally fun to do for an April Fools' Prank. Tell your Kids that you are magic and you can remove the egg shell without cracking the egg. They won't believe you, but in 2 days you will show them just how magical you are.


Start with an egg straight from the refrigerator
The shell is calcium carbonate (base)


Get some vinegar (acid) too


Put egg in a glass of vinegar
Watch the reaction start



After 1 Day
The bubbles are carbon dioxide that is released as a result of the reaction
The broken down shells will be the white foam on the top



After 2 Days
The shell is completely gone and what is left is the thin membrane around the egg

Make It Monday: Clean Eating Egg Muffins

Eggs are an inexpensive protein to incorporate in to your diet. The egg muffins are made in a batch of 15 and you can feed the whole family or reheat them over the next couple of days for breakfast as an easy make-ahead! These will be great to make and reheat on those busy school mornings that are upon us!


Clean Eating Egg Muffins
8 egg whites
4 whole eggs
3/4 C fat free cottage cheese
1 med zucchini, shredded (about 1 1/2 C)
1 C tomatoes, chopped
1/2 C carrots, finely shredded
1/4 C onion, minced
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried cilantro
salt and pepper to taste

Directions:

  • Preheat oven to 375
  • Combine all ingredient in a mixer and blend together
  • Spray muffin tin with non-stick spray
  • Scoop 1/3 C of mixture in to each muffin tin
  • Bake for 30 minutes
  • This will make about 15 egg muffins
  • Enjoy!

A reader asked me about calories and nutritional content, so I figured it out for calories/fat/fiber/protein by looking up all the ingredients but I did not include the dried herbs.

The first number is the amount in the entire recipe and the 2nd number is one egg muffin (out of 15.)

Calories: 653 / 43.5
Fat: 22.9g / 1.5g
Fiber: 6.5g / >.5g
Protein: 86.3g / 5.75g
