EASY Strawberry Cream Cheese Crescent Rolls


These were super simple to make and everyone loved them. It was only 4 ingredients and made for a delicious addition to breakfast.

Easy Strawberry Cream Cheese Crescent Rolls
1 can of Crescent Rolls (makes 8)
2 oz cream cheese, softened
1 packet of Stevia (or sugar, Splenda or whatever sweetener you use)
Fresh Strawberry Slices

Directions

  • Preheat oven as directed on crescent roll package
  • Blend together cream cheese and stevia
  • Slice Strawberries so that you have 2-3 slices were roll
  • Unroll all 8 crescent roll pieces
  • Divide cream cheese among the rolls making small spoonfuls in the center of the wide end
  • Top cream cheese with strawberry slices
  • Roll up
  • Bake as directed on crescent roll package

Super Easy Chocolate Banana Muffins


These muffins are so super easy, that my 7 year old son made them for breakfast for us recently. They only need 2 ingredients!!! A box of chocolate cake mix and 4 medium bananas.

Super Easy Chocolate Banana Muffins
1 box chocolate cake mix
4 medium bananas, mashed

Directions:

  • Preheat oven to 350 degree
  • Mash bananas
  • Pour in cake mix (only the mix, not other ingredients listed on the back)
  • Mix together bananas and cake mix until blended
  • Scoop batter in to 18 muffin tins
  • Bake for 20 minutes
  • Enjoy!




These will be more dense than cupcakes, but still very tasty. Allow to cool before removing from the muffin tin. This is the perfect beginner recipe for a child because there is no measuring involved but they still get a chance to read a recipe and follow instructions and use kitchen tools. A perfect start to learning some life skills in the kitchen.

Pumpkin Pie Oatmeal - Clean Eating Recipe



Pumpkin Pie Oatmeal
1 C Old Fashioned Oats
1 3/4 C milk
1/4 C pumpkin puree
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1/4 tsp almond (or vanilla) extract
Top as desired: whip cream, pecans, maple syrup

Directions:

  • Bring milk, pumpkin , and all seasoning to a slow boil over medium heat
  • Stir in oats
  • Cook for about 5 minutes
  • Top as desired
  • Enjoy!

Slow Cooker Dill Potatoes and Sausages


This is super easy to make in the slow cooker before you go to bed or if you are having breakfast for dinner get it started before you leave the house in the morning.

All you need is 3 ingredients: potatoes, sausages, and dill dip mix.

Cut up about 4 cups of cubed potatoes. Place in a small slow cooker. I used a 1 1/2 quart slow cooker. Por 1 quarter cup of water over the top of the potatoes. Sprinkle 1 teaspoon of dill dip mix over the top of your potatoes and mix to evenly coat. Stir in your skin on sausages. Cook in a slow cooker for 7 to 8 hours on low.

Easy Cinnamon Sugar Donuts


These are super easy to make and you only need a few ingredients. You are going to wonder why you haven't made these before. Everyone loves them when I make them. Make sure you buy the grand size biscuits. All these does cell large biscuit that works as well. Just don't buy the small biscuits.

Easy Cinnamon Sugar Donuts

Tube of large biscuits 
Canola oil 
1/2 C sugar
1/2 tsp. Cinnamon 

Directions:
Pour enough oil into a frying pan to cover it 1/4-1/2" in the pan. Heat the oil so that it is hot before putting in your first biscuit. This will take about a minute on medium-high heat.

Cut circles into the center of the biscuits using a small circle cookie cutter.

Microwave for biscuits at a time and their corresponding donut holes for 1 minute at 100%. This helps to start cooking it in the center. If you don't do this you will have to fry them longer and they may not taste as well.

Place microwave biscuits in the hot oil and cook until golden brown on the bottom, then flip and cook until golden brown on the second side.

Immediately toss in some cinnamon sugar, which you made by mixing together the cinnamon and sugar. Allow to cool on paper towel on a plate. The paper towels will help to absorb excess oil.

Flag Waffles


Just a fun idea to have a patriotic theme to your breakfast for the upcoming summer holidays of Memorial Day and 4th of July and Labor Day. I made homemade waffles and have a waffle maker that makes two waffles this size at a time. You could possibly even use frozen waffles if you wanted that are square as well. Just slice up your fruit to fit in the size hole that is available on the waffles you are using. I used blueberries strawberries and bananas but next time I think my kids would love to have me use raspberries. They love this and it got us to eat more fruit that day.

How to Make a Perfect Hard Boiled Egg



I have tried various ways to make a perfect hard boiled egg over the years and what it really comes down to is being ready to set the timer when the water starts boiling.

How to Make a Perfect Hard Boiled Egg

Place your eggs in a small post, covering them with water completely.
Bring the water to boil. 
AS SOON AS IT STARTS BOILING, set your timer for 9 minutes.
As soon as the timer goes off, remove from heat and pour out boiling water.
Cover eggs with cold water.
After about 30 seconds, pour out that water and cover eggs again with cold water.
Allow eggs to cool in this 2nd batch of cold water.
Peel and Enjoy!

Banana "Sushi" Roll-Ups


Here are a couple of fun ideas to make banana "sushi" roll ups. My kids have loved having these for a snack or for breakfast.

For both ideas you need a tortilla shell and a banana. If you use the taco size tortilla shell, a banana will fit in it nicely.

For the idea on the left I spread peanut butter on both sides of the  I wrapped up a banana on the inside and then rolled the roll in crisp rice cereal. Then slice like you would a sushi roll. This one was a little more putzy than the other but they liked it.

The one on the right is a tortilla shell with Nutella spread on one side then a banana placed on top and rolled up so that the Nutella is on the inside with the banana. Then slice the roll.

Quick and Easy Ham and Egg Cups




Breakfast today looks fancy but is super easy. 

Ham and Egg Cups
 Preheat oven to 375. 
Spray Muffin Tin
Just line muffin tin with thin ham slice and crack in whole egg. 
Season as desired. 
Bake for 20 min.

That's it! Seriously! Can it get any easier? If you want to try something with a little more ingredients, try out my Low Carb Ham and Egg Cup Recipe. Of course, this is obviously a low carb recipe, but you can change it up if you want scrambled or a whole egg.

7 Days of Eggs

Tired of making scrambled eggs or fired eggs and want to think outside the box for some creative and healthy ideas, then check out how I ate eggs on 7 days last week.



I had decided to participate in an Instagram (Follow me on Instagram) promotion for Eggsland's Best. I didn't get paid or anything, I might win a prize but I don't even know what they might be.I didn't do it for the prize, although winning one would be nice. I liked the challenge of coming up with different ways to eat my eggs every day and present them on a plate so that they looked nice on Instagram. I do love eggs and typically do eat them 2-3 times a week.

Fun Valentine Food!!!


Who said you had to spend a lot of money on Valentine's Day or that it had to filled with chocolate. You can make your loved ones a special Valentine's breakfast that is healthy too.

To make the heart shaped eggs I made boiled eggs and peeled them while they still hot/warm and put them in their homemade "mold". The mold consists of a pieces of cardboard from a cracker box that I cut to the size that would be to the top of the eggs and then folded in it halg so it had a pointed crease at the bottom. Then I used a chopstick that that I rubber banded in place to help create the indent at the top of the heart.

To make the heart toast, I simply used a heart shaped cookie cutter to cut out hearts from the bread before toasting it and topped it with my Homemade Freezer Strawberry Jam. I thought a couple of clementine pieces on a toothpick made a nice health arrow through the heart.

How fun would this be to give your kids for breakfast. It's so simple too. It's just 1 1/2 frozen waffles with some whip cream tp give the details of fins and a face. My kids thought I was pretty genius when they saw this.

Low Carb Egg & Ham Cups



This is a quite simple and easy and tasty, you will wonder why you haven't added it to your breakfast recipes before this.

Low Carb Egg and Ham Cups
18 pieces of thinly sliced ham
6 eggs
1 C milk
1 1/2 C shredded cheese (I like mozzarella or cheddar)
salt & pepper to taste
cilantro (optional)

Directions: 

  • Preheat oven to 350 degree
  • Spray muffin tins with non-stick spray
  • Line 18 muffin cups each with a piece of ham. 
  • Mix together eggs, milk, cheese and seasonings.
  •  Divide egg mixture among the 18 muffin cups.
  • Bake for 20-25 minutes
  • Allow to cook for 5-10 minutes before serving
  • Enjoy!

Clean Eating Carrot Cake Oatmeal



Clean Eating Carrot Cake Oatmeal
1 3/4 C milk (whichever variety you enjoy)
1 3/4 C water
3/4 C carrots (chopped or shredded)
1 tsp cinnamon
1 tsp vanilla
1/4 tsp nutmeg
2 C old fashioned oats
4 packets stevia
Top with nuts, raisins, or homemade whipped cream, if desired

Directions:

  • Bring to a boil the milk, water, carrots cinnamon, vanilla and nutmeg.
  • Boil for 5 minutes to soften the carrots
  • Stir in old fashioned oats and stevia
  • Cook for 5 minutes until oats thicken
  • Scoop in to 4 bowls and allow to sit for 5 minutes, it will thicken as it cools
  • Top with additional toppings if desired
  • Enjoy!

Cake Part
3 C whole wheat flour
1/2 tsp salt
2 tsp baking powder
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp cinnamon
1 C raw sugar
1/4 C coconut oil, melted
2 eggs
1 1/4 C coconut milk
1 tsp vanilla
1 1/2 C pumpkin puree

Topping
1/2 C coconut oil, melted
1/2 C cinnamon sugar
1/2 C old fashioned oats
1/2 C pecans, chopped

Gluten Free Raspberry Chia Seed Muffins
1 C Bob's Red Mill Gluten Free All Purpose Gluten Free Baking Flour
1 C Brown Rice Flour
1/3 C Sucanat
1/4 C chia seeds
1/8 tsp salt
2 tsp baking powder
1 egg
1 C unsweetened almond milk
1/4 C coconut oil, melted
1/2 tsp pure almond extract
1 C frozen raspberries

Directions

  • Preheat oven to 400 degrees
  • Combine flours, sucanat, chia seeds, salt and baking powder in a large bowl and set aside'
  • In a small bowl, mix together egg, milk oil and extract
  • Mix wet mixture in to dry mixture
  • Fold in raspberries
  • Bake for about 20 minutes

Easy Broiled Grapefruit



Making Broiled Grapefruit is easy, healthy and tasty.

Directions:
  • Set oven to broil, allow a couple minutes to heat up
  • Cut grapefruit in half and place in a baking dish (line with foil if you like)
  • Using a sharp knife, cut around the edges and across both ways to make it easier to release the fruit from the rind
  • Drizzle maple syrup over the top
  • Broil for 5 minutes
  • Serve immediately
  • Enjoy!

Get Up & Go Protein Chocolate PB2 Banana & Coffee Smoothie



Get Up and Go Protein Chocolate PB2 Banana Smoothie
1 C cold coffee
1/2 C unsweetened almond milk (or milk of choice)
1 banana
1 scoop chocolate protein powder
1 T PB2

Directions:

  • Put all ingredients in a blender or smoothie maker in the way listed from top to bottom, so that the liquids are by the blender piece.
  • Blend until smooth
  • Enjoy!

Dinosaur Pancakes


Just a few ideas to make your ordinary pancakes a little more interesting for your kids. I just put the pancake mix in a plastic baggie and snipped of a corner so that I could draw out my dinosaurs. We usually have whip cream and chocolate chips around, so I embellished my creations with those. The kids loved them, especially my dino loving son.

Coconut Flour Protein Coffee Cake



Coconut Flour Protein Coffee Cake

3/4 C coconut flour
3/4 C oat flour
1/2 C natural apple sauce
1 scoop vanilla protein shake mix
1 T stevia powder
4 eggs
1 1/2 C coffee
2 T coconut oil, melted
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp sea salt


Topping
1/2 C pecans, chopped
1/4 C unsweetened coconut
1/4 C old fashioned oatmeal
1/4 C sucanat
1/4 C melted coconut oil

Directions:

  • Preheat oven to 350 degrees
  • Spray an 8x8 baking dish with non-stick cooking spray
  • Combine all cake ingredients in a food processor and process until well mixed
  • Spread cake mixture into the greased cake pan
  • Mix together all topping ingredients in a bowl, except the coconut oil
  • Slowly pour in melted coconut oil and stir together until topping is evenly mixed
  • Sprinkle topping on top of cake
  • Bake for 40-45 minutes
