Make your brownies a little healthier by replacing the water and oil with pumpkin (cutting out some fat & adding more fiber) or make them healthier still by replacing the eggs with more pumpkin. Who says you can't watch what you eat and still have chocolate? Just make it healthier.
Super Easy Pumpkin Brownies
Version #1 (cake-like, pictured)
1 Family Size Box (13x9) of Brownie Mix
1 C Pumpkin Puree
2 Eggs
1T cinnamon (optional)
Or
Version #2 (fudge-like and a little healthier)
1 Family Size Box (13x9) of Brownie Mix
2 C Pumpkin Puree
1 T cinnamon (optional)
Mix and bake as directed on the packaging. Simple as that.

How to Make Pumpkin Jam
I have an abundance of pumpkin to use this year and have made some pretty tasty things already. You can use your own pumpkin you baked (tutorial here!) or buy a store bought can. Each year I pick a new jam/jelly to make and like to gift some of my jars during the holiday season.
Pumpkin Jam Recipe
4 C Pureed Pumpkin
4 C Sugar
4 C Water
2 tsp Ground Cinnamon
1 tsp Ground Ginger
Pinch Ground Nutmeg
1 tsp Almond or Vanilla Extract
Zest of 1 Lemon or of 1 orange
4 T Lemon juice
2 tsp Cointreau or Triple Sec
* In a pan, stir together all ingredients and bring to the boil. Lower the heat and let the mixture simmer for about 45-60 minutes, until thick. Pour into clean/sterilized jam jars/pots.Seal the jars hermetically. Let cool.

Try It Tuesday: Painted Spider Pumpkin & Pumpkin Drawings
The painted spider pumpkin craft was the idea of a friend of mine. We like to have lunch, spilling in to afternoon play dates with our youngest kids and we plan some kind of craft for them to do. The morning we made these, my son asked me if we could do a spider craft that day. I told him I didn't know what our friends had planned and unbeknownst to us it was a spider craft.
I also did pumpkin drawings with my kids and just gave them mini pumpkins and a large set of permanent markers (you don't want to use washable because it just won't set on the pumpkin skin) and let them draw.
My son did the above pumpkin pretty much on his own, I just had to carve the holes for the legs to be inserted since we were using sharp scissors.
To make the painted spider pumpkin you need a miniature pumpkin, acrylic black paint (or any other color you want), newspaper, paint brush, scissors, black pipe cleaners, glue, some beads and googly eyes.
- Have the child paint his pumpkin on top of newspaper and all to dry.
- When it is dry you can use a scissors to cut some pipe cleaners to size and bend in to shape.
- Puncture holes in the sides of the pumpkin to make it easier to insert pipe cleaner legs.
- Glue on eyes and nose and allow to set before handling.

Pumpkin Cheesecake
Pumpkin Cheesecake
1 1/2 cups graham cracker crumbs
4 tablespoons (1/2 stick) melted butter
1/4 cup sugar
1 1/2 lbs. cream cheese, softened
1 14-oz. can sweetened condensed milk
2 C pumpkin puree
4 eggs
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
Directions
Preheat the oven to 350º F. Mix melted butter with graham cracker crumbs and sugar in a bowl. Press the mixture into the bottom of the pan. Bake at 350º F. for 10 minutes.
Meanwhile, in a large mixing bowl, combine the cream cheese and sweetened condensed milk. Beat at medium-high speed until well combined. Add the pumpkin puree, eggs, cinnamon, nutmeg, and ginger. Beat at medium speed until smooth. Scrape the sides of the bowl and beat again until the mixture is completely smooth. This may take 1-2 minutes. Pour the mixture into the prepared springform pan. Bake at 350º F. for 60 minutes.
Remove the cheesecake from the oven and place it on a wire rack to cool. Run a knife blade along the rim of the springform pan to release the edge of the cake; but do not remove the outer ring of the springform pan just yet. Leave the cheesecake on the wire rack until it is completely cooled. Remove the outer ring of the springform pan and place the cheesecake in the refrigerator for 2-3 hours or overnight.

Crock Pot Pumpkin Curry Soup
I asked my daughter what she wanted me to make with the pumpkin she received from her class field trip to the Oak View Nursery and Pumpkin Patch and after coming up with several ideas she decided on pumpkin soup. Thanks to the book Plumply Dumply Pumpkin for providing so many ideas (great book for kids!) I couldn't find the exact recipe I was looking for to make a crock pot, so I needed to come up with my own recipe. This was a very tasty soup!
Crock Pot Pumpkin Curry Soup
4 cloves garlic
1 medium onion
2 C cooked, pureed pumpkin (learn to bake you own pumpkin)
4 C broth
2 tsp. curry powder
salt and pepper to taste
10oz container of Philadelphia Original Cooking Creme
Directions:
Mince onions and garlic. Heat some olive oil in a saucepan over medium-high heat. Add garlic and onion and saute until translucent. Add onions, garlic, pumpkin, brother and seasonings to a crock pot. Cook on High for 3-4 hours or Low for 7-8 hours. Stir in cooking creme during the last 20-30 minutes. Enjoy!

Make It Monday: Southwestern Roasted Pumpkin Seeds
One of my favorite things about carving pumpkins (be sure to check out our creations this year) is that we have an abundance of seeds to roast. This recipe fits perfectly in the clean eating or paleo lifestyle. If you are looking for something sweet, then try my Sugar and Spice Pumpkin Seeds Recipe. Or maybe you want to use the pumpkin too, then read my post on How to Bake a Pumpkin.
Southwestern Roasted Pumpkin Seeds
1 1/2 C pumpkin seeds, rinced and dry
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin
1/8 tsp celery salt
1/8 tsp hot sauce
1 1/2 tsp grapeseed oil (or your oil preference)
Directions:
- Preheat oven to 375 degrees
- Combine all seasonings and oil in small dish
- Pour seasoning mixture over bowl of pumpkin seeds and stir until well coated
- Spread in a single layer on a cookie sheet
- Bake for 15-20 minutes
- Allow to cool before serving
- Enjoy!

Pumpkin Carving and Decorating
These are the pumpkins that the kids and I made today. We discussed what they each wanted to do and looked up ideas prior to starting. The above picture is the final project. I can't wait to see how they look all lit up.
My son helped me pick out pumpkins and of course he picked the biggest ones he could find. If you scroll down to the last picture you can see how big these pumpkins are compared to my mosaic pumpkin.
This was their project and I wanted them to complete as much of it as was safe for them to do and had the attention span to do. This was the first year my daughter did the carving on her own using a pumpkin knife. I did the carving for my son. Before they carved I had them draw the jack'o'lantern features on the pumpkin with a permanent marker. Then I know exactly what they want and where they want it (less arguments!)
They normally like to do all of their projects on their own and do not want help from each other, but they each wanted to stick in toothpicks and hammer in nails, so they agreed to work together. Hooray for woring together!
There is something therapeutic of hammering nails in to a pumpkin. It goes in smoothly and kids can hammer it easily.
The top one is my son's design. He wanted a carrot nose and glasses (we bought a pair of sunglasses from the dollar store) and a mouth full of toothpick teeth. I have to say - making toothpick teeth is so much easier than carving out teeth.
The bottom one is my daughter's design. She thought it looked even creepier if she used the lenses from the sunglasses used for my son's jack'o'lantern in place of just carved out eyes. She wanted to use a bunch of different kinds of nails (she asked daddy what he had leftover he didn't need) and used staples as stitches.

Make It Monday: Pumpkin Bars Recipe
I can't believe I haven't already shared this pumpkin recipe with you. Be sure to check out all my other pumpkin recipes. I love to cook with pumpkin. It is chock full of nutrients and fiber! This recipe originally came from a church cookbook, but I have since modified it to be a little healthier (not by much, just made a couple changes.) These bars are always quick to be devoured!
Pumpkin Bars Recipe
2 C pureed pumpkin
2 C whole wheat flour
1 C raw sugar
1/2 C canola oil
1/2 C natural apple sauce
4 eggs
1 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp almond extract
Directions:
Preheat oven to 350 degrees. Spray 2 jelly roll pans (about 11x16) with non-stick spray.
Combine all ingredients in a mixing bowl and mix until well blended.
Divide equally between the two pans.
Bake for 15 minutes.
Cool. Dust with powdered or top with cream cheese frosting (if desired.)
Enjoy!

Make It Monday: Chocolate Chip Pumpkin Bread & Good Cooks Mini Loaf Pan
Ok, so this is more indulgent than it is healthy, but we all deserve a treat now and then and this is a healthier sweet treat than most. And these are the perfect little treats to give to friends, teachers and neighbors. I have made this both as regular loaves and in the Good Cook Sweet Creations Mini Loaf Pan.

Chocolate Chip Pumpkin Bread Makes 2 Loaves or 4 mini loaves
2 C pureed pumpkin (check out How to Bake a Pumpkin, or use canned)
1 1/2 C sugar
1 T molasses
2 eggs

1/2 tsp almond extract
2 C whole wheat flour
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cloves
1 tsp baking soda
1/2 baking powder
1/2 tsp sea salt
1/3 C chocolate chips
1/4 C chocolate chips
cinnamon sugar (optional)
Directions:
- Preheat oven to 350 degrees
- Blend together pumpkin, sugar, molasses, eggs, and apple sauce
- Sift Together all dry ingredients
- Mix dry ingredients in to wet ingredients and blend until mixed
- Split half the mixture among 2 bread pans
- Sprinkle 1/3 C of chocolate chips across the mixture in the pans
- Top with remaining bread mixture equally over both pans
- Sprinkle 1/4 C chocolate chips across both pans
- Sprinkle cinnamon sugar across the top, if desired
- Bake for 50-60 minutes (regular size loaf) and 40-45 minutes (mini loaves)
- Cool and Enjoy!

Lowe's Build and Grow -- Pumpkin Carving Demonstration with FREE Pumpkin
This is for THIS SATURDAY! Registration just opened yesterday, but I guarantee you that spots will be filled fast. This is a picture of the sign I took at my local Lowe's and it says that each child will gt a FREE mini pumpkin and sticker sheet. Plus you get to watch a pumpkin carving demonstration using a Dremel Pumpkin Carving Kit (perhaps they will give a coupon for those kits). We are already signed up and I am very interested in seeing how we can making carving pumpkins easier!

Pumpkin Cream Coffee Cake
Time for another pumpkin recipe!
Pumpkin Cream Coffee Cake
Streusel
1/4 C brown sugar
1/4 finely chopped nuts
1 tsp cinnamon
Cake
1 1/2 C pumpkin puree
4 eggs
1 10oz container of Cooking Creme (could use 1 brick cream cheese + 1/4 C sour cream)
1/2 C apple sauce
1 1/2 C sugar
2 tsp vanilla
3 C white whole wheat flour (I used white, but regular WW would be fine too)
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
2 tsp baking soda
1 tsp salt
Directions:
Preheat oven to 350 degrees F. Grease a bundt pan.
Mix streusel ingredients together and set aside.
Beat pumpkin, applesauce, oil and sugar together with an electric mixer. Beat in eggs. Add sour cream and vanilla, beating until well-combined. Measure the flour. Dump the flours on top of the cake batter, but do not mix in yet. Spoon baking soda, cinnamon, nutmeg & ginger and salt on top of flour. Now, with the electric mixer on low, mix the flour into the batter. Make sure it is completely incorporated, but do not overmix. Spoon half of the cake batter into the prepared bundt pan. Sprinkle the streusel filling evenly over the cake batter, being careful not to allow it to touch the sides. Spoon the remaining cake batter over the streusel filling. Bake 55-60 minutes. Invert cake and let cool completely. Dust with powdered sugar before serving.

2/3 C evaporated milk

Jiva Organics Organic Mishri (optional,to top with)
Directions:
Line an 8x8 pan with tin foil and spray with non-stick cooking spray.
Combine milk, sugar, pumpkin, salt, cinnamon, ginger and nutmeg in a heavy saucepan. Stir until combined. Bring to a boil over medium heat and boil for 10 minutes, stirring constantly. Stir in baking chips as you continue to cook for 2-3 minutes longer. Stir constantly until chips are completely melted and blended. Remove from heat and stir in vanilla and marshmallows.Stir until smooth.
Pour in to the prepared pan. Cover and refrigerate until set. After about 30 minutes, you can sprinkle Jive Organics Organic Mishri on to, if desired.
Flip fudge on to a cutting board using the tinfoil to remove it. Peel away tin foil and then flip fudge square back over. Enjoy!
My Thoughts on Jiva Organics Organic Mishri
This organic mishri is a hard "rock" candy that is popular in India. You can certainly eat the candy just as it is right out of the bag for a sweet treat, but why not use it as a fun and sweet ornamentation to top some fudge, like this Pumpkin Fudge. The mishri has a simple sugary sweetness and no other flavors, so if you desire a simple sweet treat without other flavors this might be the perfect thing for you. These little sugar candy morsels also taste nice in tea and coffee and look very nice in a bowl to set our for guests over for tea/coffee.

How to Make Sugar & Spice Roasted Pumpkin Seeds
* 1 C raw rinsed & separated pumpkin seeds
* 1 T melted butter
* 1 T white sugar
* 1/2 tsp. cinnamon
Rinse & separate raw pumpkin seeds from pulp. Pat slightly dry.
Melt butter. Mix in sugar & cinnamon. Mix in pumpkin seeds.
Spread on baking sheet (I have a silicone sheet I use on mine so that I don't need to spray & is easy to clean up.) Bake at 300 degrees for 45-55 minutes. Cool before serving.
Your house will smell so yummy while these are roasting.

Pumpkin Pie Oatmeal - Clean Eating Recipe
Pumpkin Pie Oatmeal
1 C Old Fashioned Oats
1 3/4 C milk
1/4 C pumpkin puree
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp salt
1/4 tsp almond (or vanilla) extract
Top as desired: whip cream, pecans, maple syrup
Directions:
- Bring milk, pumpkin , and all seasoning to a slow boil over medium heat
- Stir in oats
- Cook for about 5 minutes
- Top as desired
- Enjoy!

Whole Wheat Pumpkin Pancakes Recipe
Whether you are trying to eat healthy to get in better shape, as a new year's resolution or always try to eat with whole foods, switching to whole wheat flour from the all-purpose white flour is a good starting point and is easy to do. Pancakes are easy to make and when you can make them taste like pumpkin pie without any of the sugar, then then are even better. Consider using pure maple syrup, apple sauce, or another fruit sauce that you make yourself to be assured of the sugar content, like my Low Carb Raspberry Sauce recipe.
Whole Wheat Pumpkin Pancakes
3 c. whole wheat flour
1 tbsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 C pumpkin puree
3 eggs
2 c. whole milk, or unsweetened almond milk
1/2 c. coconut oil, melted
Directions:
In a large bowl, mix together dry ingredients. Add eggs; mix slightly and continue adding remaining wet ingredients. Stir until well combined. Using 1/3 c. measuring scoop, scoop batter on to heated griddle or pan sprayed with cooking spray. Cook 1-2 minutes until bubbles appear. Flip and cook an additional 2-3 minutes until fluffy and golden brown. Enjoy!

No Carve Jack-O-Lantern Ideas
These are simple ideas to "save" your pumpkin from carving. Maybe you want to bake it as well as have a jack-o-lantern (you can bake and eat a carving pumpkin but they are not as sweet and are stringier than a pie pumpkin, but if you are going to puree it, does it really matter?)
For the eye ball one I just used a dab of Elmer's glue on the back of each one and stuck it in to place and used up a packet of google eyes from the dollar store to make this.
The second one is also from the dollar store. They sell little jack-o-lantern kits (like the ones I used on our Halloween Pop Bottles) and usually there are 2-3 in each packet.
And finally, I save 2 large googly eyes from the packet to use for this one. I wrapped my pumpkin in toilet paper and used clear packing tape to keep it in place and applied tape periodically as I wrapped it and finally just glued the googly eyes to the toilet paper.

Try It Tuesday: A Pumpkin Hat on the Knifty Knitter
It must be the cool weather that has me making hats in October. I made my kids hats on the Knifty Knitter loom set last October, but those ones were for Christmas presents. This Pumpkin hat was one I made him for fall because of 2 reasons: 1) it would look nice with his hunter green vest (not pictured) and 2) he was born just before Halloween and the hospital gave us a pumpkin hat to come home in on Halloween and I wanted to make him a new one now before he gets too old and pumpkin hats become not cool.
I think making hats on the Knifty Knitter 210467 Round Loom, Set of 4
is quite simple. By doing the simple e-wrap stitch you can quickly and easily make a hat. Some day I will venture in to learning other stitches. The kit mentioned above does include instructions and those the precise instructions I followed to make the hat.
To make the stem I used the Knifty Knitter 4-1/2 Inch X8-1/2 Inch Spool Loom
(small side with a very thick yarn). You may remember that I used this same tool to make the strap on my daughter's handwarmer/muff.
Since I was making my son the hat, I wanted to make a new fall headband for my daughter. So, I asked my friend Beth from Knaebean Creations to teach me how she made the ones for us & for the giveaway I did a while back. Not sure I could make this again without help, but it was my first time crocheting something other than a long chain.
