Where Have I Been?

To be honest, I just don't have the time to post on the blog all the time. I am still active on social media.

If you want to see what I have making in the kitchen, then you should definitely follow my Save Green Being Green Facebook page.

If you want to see my travels, then following me in Instagram is your best bet.


Instagram is also the place where I share what I am up to at the gym or in my fitness classes.

I am no longer doing product reviews, so if you see me posting about a product it is because I want to. I did not receive it for free or at a discount. I paid for it and think other people might like to know about it. I still leave reviews on Amazon, but again, these are products I have paid for. I personally find the reviews helpful and want to offer the same courtesy to other people.

I'm a post on here from time to time, especially when I have recipes that I have made my own and don't want to forget what I did. Like this grain-free granola that is pictured above. It is currently in the oven as I blog right now, so when you see the final post it should be a browned granola.

Easy Mini Meatloaves


These mini meatloaves took me 25 minutes to assemble and cook. This is a very feasible meal to make within 30 minutes of getting home. The kids really liked the flavors that the stuffing mix give these mini meatloves and I really likes how quick it is to make dinner.

Easy Mini Meatloves

1 pound ground beef
1 box instant stuffing mix
2 eggs
ketchup


Directions: 
  • Preheat oven to 350 degrees
  • Scramble eggs.
  • Mix together eggs, ground beef and stuffing mix.
  • Add 1/4 - 1/2 C water if needed*
  • Allow to sit for 5 minutes 
  • Shape in to balls and pat in to muffin tins
  • Top with ketchup
  • Bake for 20 minutes


Depends on the leanness of your ground beef, if you use 75 lean you won't need water, but if you use 90 lean  you may want to add up to 1/2 C water

Double Chocolate Peanut Butter Protein Balls





Double Chocolate Peanut Butter Protein Balls

1/3 C Chocolate Protein Powder
1/2 C Honey or Maple Syrup
1/2 C Peanut Butter
1 C Quick Oats
1/2 C Mini Chocolate Chips
1 tsp Vanilla
2 T Chia Seeds or Flax Seeds

Directions:
Mix everything together in one bowl.
Shape in to 1" balls.
Store in an airtight container in the fridge.
Makes 18
 balls.
