Ground Hog's Day Pancakes

Happy Ground Hog's Day!!

I can already tell you, no matter what Punxsutawny Phil does when he pops out of the ground in a few hours, it doesn't much matter to us in Minnesota. Geographically, we are destined to have at least 6+ more weeks of winter (the + being the operative sign here), but it is sure nice to dream that it could shorter. 

Here in Minnesota, a better animal analogy for our winter weather comes in (and departs) March when we compare it to lions and lambs. 

Anyways, I thought it would be fun to make the kids some Grounds Hog Day Pancakes so we could dream a little bit for gardening and outdoor swimming and boating in our future.


When I made these pancakes, I used the Clean Eating Oatmeal Pancakes recipe that I also posted today.

I used 1 large marshmallow on each pancake for the eyes and teeth, and 1/2 of a hard boiled egg (cut in half) for the ears.
