Gluten Free Raspberry Chia Seed Muffins
1 C Bob's Red Mill Gluten Free All Purpose Gluten Free Baking Flour
1 C Brown Rice Flour
1/3 C Sucanat
1/4 C chia seeds
1/8 tsp salt
2 tsp baking powder
1 egg
1 C unsweetened almond milk
1/4 C coconut oil, melted
1/2 tsp pure almond extract
1 C frozen raspberries
Directions
- Preheat oven to 400 degrees
- Combine flours, sucanat, chia seeds, salt and baking powder in a large bowl and set aside'
- In a small bowl, mix together egg, milk oil and extract
- Mix wet mixture in to dry mixture
- Fold in raspberries
- Bake for about 20 minutes
