Make It Monday: Stuffed Apple Rings

Having the kids home for the summer (well, one is out of school for the summer, the other is still with me full-time as he is only a toddler) has been making me have to explore new recipes that can serve as both a healthy snack and a fun activity for them to do. This meets both of those expectations.

This will be a wonderful after school snack too or mid-afternoon pick me up!

If you wanted to clean up this recipe more, you could omit the chocolate chips and use nuts (chopped almonds would be great) or coconut instead.



Stuffed Apple Rings
  • 1/4 cup nut butter (peanut, cashew, almond, soy) 
  • 1-1/2 teaspoons honey
  • 1/2 cup miniature carob or dark chocolate chips
  • 2 tablespoons raisins
  • 4 medium unpeeled apples, cored
Directions: 
In a small bowl, combine peanut butter and honey; fold in chocolate chips and raisins
Fill centers of cored apples with peanut butter mixture; refrigerate for at least 1 hour. Cut into 1/4-in. rings. 
Makes about 2 dozen.
