Cornbread, Pecan & Sausage Stuffing Recipe with Mrs. Cubbison's Stuffing

Do you know that Thanksgiving is the second favorite holiday after Christmas? And that most people spend it with their family?

Did you know that Stuffing/Dressing is the second favorite item on the Thanksgiving dinner table?

You can read these survey results in addition to a variety of other questions about Thanksgiving in the "Thanksgiving Across America" Survey for 2012.

Have you started planning out your Thanksgiving menu yet? If not, you might want to consider my tasty and easy recipe I am sharing below.

This is my own recipe that was prepared using Mrs. Cubbison's Corn Bread Stuffing. They provided me with the two boxes of stuffing to review them and post my own recipe or Thanksgiving ideas using their stuffing. I did not receive any monetary compensation for this post. You may remember that I shared with you the Classic Dressing about 6 months ago in my post on Easter Culinary Traditions - Savory Sides. So, today I am going to share with you my recipe for Cornbread, Pecan & Sausage Stuffing using Mrs. Cubbison's Corn Bread Stuffing. This recipe would be to stuff a bird that is 12-14 pounds.

Cornbread, Pecan & Sausage Stuffing
1 box of Mrs. Cubbison's Corn Bread Stuffing
1 pound of pork breakfast sausage (bulk log) (I used pork & bacon sausage in the above picture)
1 C onion, chopped
1 C celery, chopped
1/2 C chopped pecans
2 C chicken broth
3 T butter, melted

*Preheat oven to 350 degrees
*Brown sausage over medium heat until crumbly
*Saute onions and celery until onions are translucent
*Combine stuffing mix, sausage, onion, celery, pecans, broth and butter in and mix until mixture is moist
*If stuffing turkey, roast until the center of the stuffing is 165 degrees
*If making it an oven casserole, place stuffing mixture in a greased casserole dish and cover and bake for 45 minutes.
